1700 Humboldt St. Denver, Colorado 80218
Uptown

Our intention at Humboldt is to serve inspired, fresh, approachable, and honest food. We want to provoke your senses and take them from classic, nostalgic flavors to new, inspired dishes with a nod towards the American classics. With the kitchen led by Executive Chef Kollin Gateley, this is modern American cooking at its best. Our menu features the kind of food you’d want to eat with friends and family, sparking memorable flavors while satisfying your palate. Using mostly local ingredients, our produce, farm and fish are prepared on site every day, and paired with ingredients so good they really speak for themselves.

Bar

Humboldt is a neighborhood bar that is as inviting as it is surprising. Our mission is to offer chef-inspired food that can be paired with a delicious array of libations, and enjoyed in a relaxed atmosphere. We are passionate about our hand-selected choices of unique wines and craft beer alongside a multitude of seasonal cocktails emphasizing crafted and classic flavors. In addition, Humboldt offers a great selection of delicious small plates that can be shared amongst friends at our community style seating – so whether you’re stopping in for a drink and a bite, or starting your meal off in style – pair it with something classic, or go for one of our originals.
